Peruvian-style Mussels

  1. Rinse mussels thoroughly and scrub under water.
  2. Cook mussels in boiling water and remove from pan.
  3. Discard mussels that do not open.
  4. Cool.
  5. Deseed, devein and chop the hot peppers.
  6. Combine in a bowl, onion, hot peppers, tomato, parsley, corn, oil, key lime juice, salt and pepper.
  7. Let mixture stand for 15 minutes.
  8. Place 1½ tablespoon of this mixture over each mussel.
  9. Serve with lime wedges.
